When I go to La Madeline’s these are the first thing I see and as much as I love that cafe’s food…I just adore these cookies.  They are so festive and perfect for Christmas or anytime really.  They make gorgeous Valentine cookies using a heart shaped cookie cutter.

There are lots of recipes for Linzer cookie dough…I used a basic shortbread recipe…..but it’s the raspberry jam sandwich that is so classic.

Linzer Cookies

Ingredients:

  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 2 tsp vanilla
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 jar raspberry jam
  • parchment paper

Directions:

  1. in a large bowl, whisk together flour, baking powder and salt.  In stand mixer, beat butter and sugar on medium speed until well blended.  Reduce speed to low and gradually add dry ingredients.  Mixture should look like coarse crumbs.  Gather together to make 2 balls of dough…this should come together very easily.  Wrap each ball in plastic wrap and chill for 30 minutes in fridge.

  2. Heat over to 350.  Remove one portion of dough and roll out to about 1/4 inch thickness.

  3. Using a round cookie cutter, cut out an even numbered amount of circles…. because you are creating a sandwich cookie….then find a cute, smaller cutter and cut a whole in half of the cookies…creating the ‘window’ half.  You can bake the centers like I did or add them back to your leftover dough to re-roll.

  4. Now, I used a large wine glass to make my cookies because I wanted them rather large…I was thinking about La Madeline, I guess….and used a small tart shape I had to cut out the center. My cookies are about 3 inches in diameter…make yours how you like them.  Make your desired shape and transfer to cookie sheet lines with parchment paper, about 2 inches apart.  Chill again for 15 minutes, along with the cut-out dough leftovers.

  5. Bake at 350 for 8-10 minutes….do not let cookies brown.  Let cookies cool for a couple of minutes and then spoon about 1/2-1 tsp of jam onto each of the whole cookies, mounding up a bit in the center.  Once the cookies have cooled, dust the cookie rings with powdered sugar and carefully place on top of the jam topped cookies.  Cute, huh!  Repeat with remaining dough.
