I made these tasty breakfast muffins for a girls trip because I wanted something I could make ahead of time and take so we could just reheat them in the morning. You never know just how late we’ll stay up the night before…. or how many cocktails might be consumed….
These breakfast muffins with sausage are just like the little Bisquick sausage cheese balls, only better. And, since you cook the sausage before baking, these are not greasy at all.
These work well for the Holidays or when you have overnight guests, since they can be baked before and just reheated in the morning.
Easy Sausage Breakfast Muffins
Ingredients:
- 1 lb pan breakfast sausage
- 3 cups Bisquick
- 1 can Fiesta Nacho soup
- 2 cups cheddar, grated
- 3/4 cup milk
- 1/4 cup green onions, chopped
Directions:

Preheat oven to 375. Spray 12 regular size muffin tins with baking spray.

Cook sausage until browned, breaking up into small pieces.. Drain, add chopped scallions and cool.

In a large bowl add the can of soup and milk, mixing well and then stir in Bisquick. Once well combined, add cooled sausage with scallions and the cheese. Mix all well, but don’t over mix.

Spoon into muffins tins and bake at 375 for 15-18 minutes.

Eat these immediately or chill until later. reheats well.
