WAIT…Don’t leave!  I know it’s an onion salad, really more of a condiment,  but it’s really, really good.  Seriously good.  It adds a mild tasty onion flavor to every bite.  Try it, you won’t be sorry.

I can’t remember a Holiday growing up when this salad wasn’t on our dining room table.  As the story was told to me, my brother Ronnie liked green onions so much that my Mother created this…and the rest is history.  We always had a relish tray at the table and/or a small jelly glass filled with the white half of these tasty little scallions.

This little side dish pairs so perfectly with turkey, dressing and cranberry sauce that I don’t know why someone else didn’t think of this earlier.  AND…on a piece of bread with leftover Holiday Ham with a little mayo is complete and utter Heaven….

Mom’s Green Onion Salad

  • Yield: 6-8
  • Difficulty: easy

Ingredients:

  • 2 bunches scallions/green onions
  • 3 eggs, hard boiled
  • mayo & olive oil

Directions:

  1. Chop all the green part of the scallions into a bowl.  The white can be used as well, if you like more onion flavor. It’s great either way.

  2. Finely chop the eggs and add to the onion mixture.  You can put this in the fridge and finish in the morning if you’d like.

  3. Making green onion salad

  4. Sprinkle with lots of garlic salt and pepper.  Add a tablespoon (+/-) of mayo and a nice drizzle of olive oil…I started adding the oil to help thin the mayo a bit…you don’t want too much dressing.

  5. And that’s it.  Just add a dab to your plate…and make sure it sits right beside your turkey and dressing!
