This is the good old fashioned kind of banana bread that your Grandmother used to make. It is very moist, with big banana flavor, lots of nuts and just sweet enough to be satisfying.
Now that Fall is trying to set in, I just love to bake different desserts and cook lots of soups and stews. It just feels right, you know. It’s that time of year that you really want that comfort food.
This is also one of Judd’s favorite sweets so he’s really happy with me right now…Yay!!! I’d better keep baking….
Fresh Baked Banana Bread
Ingredients:
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp baking soda
- pinch of salt
- 1 cup canola oil
- 3 large ripe bananas, mashed
- 2 cups flour
- 1/2 cups pecans, chopped
Directions:

Preheat oven to 350. Butter and flour one loaf pan.

Mash the bananas and mix till creamy in a large bowl and then add oil, vanilla, eggs and sugar. Mix well. In another bowl add flour and soda and stir.

Slowly add flour mixture to the oil mixture, add in pecans, stirring until it becomes well mixed like cake batter.

Pour into loaf pan and bake at 350 for 1 hour. I added chopped pecans on top before baking. Really great flavor and very moist…totally amazing when warm!!!
