I ADORE these Italian Caprese salads. During the summer when all those fresh homegrown and heirloom tomatoes are in abundance, I make this dish several times. It’s fresh and light and yummy and the only person that doesn’t like it is Judd…but you know he’s a meat and potatoes man and won’t touch these…and that’s fine. It’s just more for me!
We like to host a Friday night dinner at home and since all these colors create quite an attractive platter, this is my go-to starter. I love to grow herbs and use them often, so in this dish, I used basil, oregano and marjoram. This makes a stunning presentation and never fails to impress.
Tomato Mozzarella Salad
Ingredients:
- 3-4 tomatoes
- 1 pkg fresh mozzarella
- 1 small red onion, optional
- balsamic vinegar, reduced
- basil pesto
- fresh herbs
- extra virgin olive oil
Directions:

I like to use the large red tomatoes and a couple of the yellow and orange because the colors are beautiful together…and they’re really tasty. I buy the mozzarella in the deli area that is a log shape…sort of. I forgot to take pictures. sorry. Let the mozzarella come to room temp and start slicing all the tomatoes, and then cheese.

Get your prettiest platter out…this is important.

Arrange the red tomatoes, cheese slices and basil leaves on one side, and then add the yellow and orange together on the other.

Place thin slices of red onion over yellow/orange tomatoes.

Sprinkle fresh herbs over everything and tuck extra herbs in between all.

Salt and pepper liberally. Drizzle olive oil over everything. Set out bowls of basil pesto and good balsamic vinegar. Look how gorgeous those colors are together! Just gorgeous.

Set your platter out so everyone can ooh and aah over it, then plate it prettily…and don’t forget to wear your flip flops…
