Growing up here in Houston, everyone knew who Mama Ninfa was. She had a great rags to riches life story, turning a small tortilla shop into a Mexican food chain, Her first and main restaurant is now lovingly known as ‘Ninfa’s on Navigation’ and it has become an Houston institution. Opening in 1973, I believe this is the only real Ninfa’s restaurant, while the others were bought out. It’s in a less than desirable part of town, but none of that matters…it is that great. Amazing fajita tacos al carbon, pickled carrots and jalapenos, enchiladas and the list goes on and on. Be very careful with those margaritas though…they are very strong and can sneak up on you!! Don’t ask how I know this…. Yes, I’ve been there many times in my flip flops…
One of Mama Ninfa’s specialties is this green sauce. It is a creamy avocado sauce with garlic, lime and a bit a heat. It is amazingly good. Perfectly delightful with my crispy pork carnitas and crispy, salty tortilla chips. I had to make myself stop eating this when I made it…so sad…
Almost Ninfa’s Green Sauce
Ingredients:
- 7oz can salsa verde
- 3 med avocados
- 3 garlic cloves
- 1 lime
- 3/4 cup sour cream
- 1 small green or yellow tomato
- 1/4 cup cilantro
Directions:

Peel avocados, cut tomato into big chunks and throw everything into a food processor or blender…except lime. Cut lime in two and add juice to blender.

Blend all together till it gets very creamy. Taste for salt.

Also, I used La Costena salsa verde, medium, which has jalapeno,s spices and tomatillos like Mama Ninfa’s original green sauce recipe.
